A tanulmány a táplálkozás egyik lehetséges alternatívájáról, a vegetárizmusról szól. Foglalkozik ennek testi és pszichés vonatkozásaival, valamint a vegetárizmus szociális és gazdasági beágyazottságával is. A tanulmányban fontos részt képvisel a vegetárizmus jelenkori és régebbi, hazai és nemzetközi története, valamint a vallások vegetárizmusról kialakított nézeteinek ismertetése. A szerző elemzi a laikusok és szakemberek attitűdjeit, és ajánlásokat is megfogalmaz a szakemberek szakmai hozzáállásával, valamint a vegetárizmus és a táplálkozás tudományos kutatásával kapcsolatban.
