Háttér: Mind a krónikus betegségek, mind az akut és krónikus megbetegedések szövődményei gyakran összefüggésbe hozhatók a glikált és lipoxidált fehérjék és peptidek felhalmozódásával a szervezetben. Szoros kapcsolat áll fenn e molekulák és a RAGE nevű specifikus receptor aktivációja, valamint egy hosszú ideig tartó, fokozott gyulladásos folyamat között. Módszerek: Főleg az elmúlt 5 évben megjelent több mint 5000 publikációról és közel 14000, a rokon HbA 1c -molekuláról írt PubMed-hivatkozások elemzése. A témához kapcsolódó közel összes absztraktot elolvastuk, valamint körülbelül 800 közleményt teljes terjedelmében, s mindet részletesen elemeztük. Eredmények: A RAGE – a sejtfelszíni molekulák immunglobulin-szupercsaládjának tagja, az előrehaladott glikáció végtermékeinek receptora – „főkapcsolóként” működik, indukálja az NF-κB hosszan tartó aktivációját, elnyom több endogén autoregulációs folyamatot, és hosszan tartó proinflammatoricus hatása miatt krónikus celluláris diszfunkciót és betegséget okoz. Aktivációja kapcsolatban áll bizonyos hibás fehérjék megnövekedett szintjével a test folyadéktereiben és szöveteiben, valamint szoros összefüggésbe hozható több betegséggel, az allergiától az Alzheimer-kóron át a rheumatoid arthritisig és különböző urogenitalis megbetegedésekig. A hőkezelés, a besugárzás és az ionizáció növeli az ételek AGE/ALE tartalmát. Következtetések: Bizonyos feldolgozott ételek a dohányzáshoz hasonlóan jelentős mértékben felelősek a glikált és lipoxidált molekulák szöveti felhalmozódásáért. Az életmódváltás, vagyis az átalakított fehérjékben és peptidekben gazdag ételek mellőzése, antioxidánsok, főleg polifenolok fogyasztása ellensúlyozza ezt a folyamatot.
