A médiában az adalékanyagokkal kapcsolatosan egyre gyakrabban felbukkanó botrányok megingatják a fogyasztók bizalmát mind az élelmiszer-előállítókkal, mind az ellenőrző hatóságokkal szemben. A fogyasztók bizonytalanságát tovább erősíti, hogy gyakran nem megfelelő, hiteltelen forrásokból informálódnak, így előfordulhat, hogy bizonyos élelmiszerek fogyasztását ok nélkül kerülik. Az élelmiszer-előállítók reakciója a kialakult helyzetben kettős. Egyrészt a mesterséges összetevők természetes anyagokkal való kiváltására törekednek a termékfejlesztés során. Másrészt élelmiszereik csomagolásán igyekeznek hangsúlyozni a termék kedvező tulajdonságait. A szerzők bemutatják az adalékanyagokkal kapcsolatos főbb trendeket. Az áttekintés alapján megállapítható, hogy a termékfejlesztési és kutatási irányzatok ígéretesek és a fogyasztói igényeket szem előtt tartva kedvező irányba haladnak.
