Basket willow (Salix viminalis L.) was grown in open-field experiment. The brown forest soil (sand texture, pHKCl 7.7, humus 1.6%, CEC 11.5 cmolc/kg; Cd-0.11, Cu-7.1, Pb-8.1, Zn-25.0 mg/kg in aqua regia extract) was treated with municipal sewage sludge compost (MSSC) (25 t/ha wet weight, 12.8 t/ha dry weight in 2009; 50 and 100 t/ha wet weight, 25.4 t/ha and 50.8 t/ha dry weight in 2008). The MSSC was moderately contaminated with toxic metals (Cd-<0.5, Cu-140, Pb-19, Zn-440 mg/kg in aqua regia extract in 2008, and Cd-<0.5, Cu-299, Pb-69, Zn-865 mg/kg in aqua regia extract in 2009). Accumulation of Zn in treated willow leaves doubled 4 months after 25 t/ha MSSC application, while in treated twig tips 30% less Zn was found than in control. Zn (max. 133 mg/kg d.w.), Cd (max. 1.15 mg/kg d.w.) and Cu (max. 7.73 mg/kg d.w.) accumulations in leaves or twig tips of basket willow were 16 months after 50 or 100 t/ha MSSC application. Twenty months after MSSC application in the harvested twigs (shoots without leaves) of 50 or 100 t/ha MSSC-treated cultures the Zn concentrations were only 9.8–14.3% higher than in controls. We suppose that there is not a direct danger of considerable Zn accumulation in the bioash after incineration of MSSC-treated willow shoots in biomass power plants.

Edible wheat gluten (WG) protein films

Abstract

Commercial wheat gluten (WG) films, hard wheat gluten films and soft wheat gluten films, plasticized with glycerol have been cast from water–ethanol solutions. The effect of aging on various film properties has been investigated. The films were aged for about 6 months at 50% relative humidity and ~25 °C, and the mechanical (tensile strength and the percentage of elongation at break (E b)), thermal (TG and DSC) and Attenuated Total Reflectance (ATR)-FTIR spectral properties have been studied. Changes in the protein structure were determined by ATR-FTIR spectroscopy. Films from soft WG exhibited the highest E b (508%) and the highest TS (6.33 MPa). The TG analysis results show that the moisture content in all three kinds of WG protein films is about 5%. The absence of the glycerol phase transition in DSC curves implies that there is no separate phase containing glycerol in the WG protein-glycerol films with 40% glycerol.

The purpose of this study was to compare the energy content and macronutrients of forty main popular traditional and modern meals in both Jordan and Hungary with the national and international recommendations. The calculation of energy content and macronutrients were done on traditional and modern recipes by two different softwares (ESHA and NutriComp). Neither Jordanian nor Hungarian foods met the recommended energy content (35% of daily energy intake, 8400 kJ for energy intake). The recipes of both nations are characterised by higher protein, fat, and salt contents than WHO recommendation, a lower fibre content, and sugar content within the recommended limits. The fat energy ratio and saturated fatty acid content of Hungarian recipes are significantly higher than WHO recommendation. In general, Jordanian meals were more likely to meet the inclusion criteria. In conclusion, neither Jordanian nor Hungarian traditional and popular meals meet the international nutritional recommendations for a healthy diet, however, the composition of the real dishes may differ significantly from the recipes depending on the available ingredients and chosen kitchen technology.

Serum/plasma fructosamine (SeFa) concentration is a reliable indicator used in human diabetic control. Tests for monitoring the carbohydrate/energy metabolism of (farm) animals are less commonly performed in veterinary laboratories, since most of the reliable determinations, both automated and manual, are relatively expensive. The aim of this study was to develop a precise, money- (and time-) saving automated micro method for measuring SeFa. ELISA microplates (20 µL samples and 200 µL reagents) and an automatic microplate autoreader were used. The classical nitroblue tetrazolium (NBT) stain reagent solution of Johnson et al. (1982) was modified using a SIGMA reagent to render it stable for up to one year. SeFa concentrations measured by the new method in 30 human blood plasma samples were compared with values obtained by the standard (generally used) LaRoche kit procedure. Fifteen cow, 13 dog and 18 chicken plasma samples were assayed by the new automated ‘micro’ method as well as by the manual test tube ‘macro’ method commonly used earlier. The modified reagent was applied for both methods. The coefficient of correlation (r) between the results obtained by the two methods was consistently between 0.94 and 0.98 (p < 0.001).

Abstract  

Pentaerythritol tetranitrate (PETN) powders are used to initiate other explosives. During long-term storage, changes in powder properties can cause changes in the initiation performance. Changes in the morphology and surface area of aging powders are observed due to sublimation and growth of PETN crystals through coarsening mechanisms, (e.g. Ostwald ripening, sintering, etc.). In order to alleviate the sublimation of PETN crystals under service conditions, stabilization methods such as thermal cycling and doping with certain impurities during or after the crystallization of PETN have been proposed. In this report we present our work on the effect of impurities on the morphology and activation energy of the PETN crystals. The pure and impurity doped crystals of PETN were grown from supersaturated acetone solution by solvent evaporation technique at room temperature. The difference in the morphology of the impurity-doped PETN crystal compared to pure crystal was examined by optical microscopy. The changes in the activation energies and the evaporation rates are determined by thermogravimetry (TG). Our activation energies of evaporation agree with earlier reported enthalpies of vaporization. The morphology and activation energy of PETN crystals doped with Ca, Na, and Fe cations are similar to that for pure PETN crystal, whereas the Zn-ion-doped PETN crystals have different morphology and decreased activation energy.

Abstract

The aim of this study was to assess the nutritional quality of homemade beef sausages by examining the amino acid, biogenic amine, and fatty acid composition. The most abundant amino acids were Ala (15.56%), Leu (13.28%), Gly (8.64%), Pro (8.41%), Ser (8.26%), and Val (7.65%). The essential amino acids accounted for 44.30% of total amino acids. Apart from the protein building amino acids, the free amino acid content was relatively high, accounting for 10% of total amino acid content. The average biogenic amine concentration in the sausage samples was low (1.69 mg kg−1). Saturated fatty acids accounted for 59.10% of total fatty acids, followed by monounsaturated (38.63%) and polyunsaturated fatty acids (2.27%). The fatty acid profile was dominated by oleic (C18:1, 34.37%) and palmitic (C16:0, 30.24%) acids, and short-chain fatty acids were also present, which may have a positive impact on gut health. The results show that beef sausages have a high nutritional value and are a good source of essential amino acids, free amino acids, and fatty acids that are important for human health.

Acute, severe hypovolemia is a medical emergency. Traditional vital sign parameters allow no optimal triage. High predictive power of finger plethysmography-based stroke volume (SV) and pulse pressure (PP) was recently suggested. To assess the performance of the PP and SV parameters, lower body negative pressure of −40 mmHg, than −60 mmHg — corresponding to moderate and severe central hypovolemia — was applied in 22 healthy males (age 35 ± 7 years). Slow breathing induced fluctuations in the above indices, characterized by stroke volume variability (SVV), and pulse pressure variability (PPV), were assessed. Responses in heart rate (HR) and shock index (SI) were also studied. Discriminative capacity of these parameters was characterized by the area under the ROC (receiver operating characteristic) curves (AUC).

Results

In comparison of baseline to severe central hypovolemia SV, PP, HR and SI showed good discriminating capacity (AUC 99%, 88%, 87% and 93%, respectively). The discriminating capacity of SVV and PPV was poor (77% and 70%, respectively). In comparison of moderate and severe hypovolemia, the discriminating capacity of the studied parameters was uniformly limited.

Conclusions

Plethysmography-based SV and PP parameters can be used to detect acute severe volume loss. Sensitive parameters discriminating moderate and severe central hypovolemia are still lacking.

Abstract

To our knowledge, there is a lack of information on the nutrient composition of Busha cattle milk with special regard to its amino acid and biogenic amine contents. The Busha cattle breed is known to be highly resistant to various diseases and well-adapted to the extensive breeding conditions of the Balkan Peninsula. Busha cow milk contains an average of 13.47% dry matter, 4.34% fat, 3.72 % protein, and 4.32% lactose. Significant differences were detected (P < 0.05) in the amino acid compositions of the milk of different Busha cattle strains of Kosovo. Glutamic acid, proline, leucine, aspartic acid, lysine, and valine represented 68% of the total amino acid content. Essential amino acids, branched-chain and sulphur-containing amino acids were found in substantial amounts in the milk samples. Among the biogenic amines, however, spermine (0.16 mg kg−1) and cadaverine (0.09 mg kg−1) were present in low concentrations. Due to these excellent qualities of the Busha cow milk, preservation of this cattle breed is of great importance. Developing sustainable and secured breeding and feeding programs for this endangered cattle breed of the Balkan Peninsula should also be a high priority.

The total viable cell count of bacteria in vacuum-packaged chilled minced beef has been decreased equally, by approx. two log-cycles, as an effect of 1.5-2.0 kGy gamma radiation or 200-300 MPa high hydrostatic pressure (UHP) treatment for 20 min. Coliform bacteria could be eliminated to non-detectable levels by the same treatments. The shelf-life of both untreated and non-thermally pasteurised samples were limited mainly by growth of lactic acid bacteria. At about equal bactericidal effect, more drastic changes of texture and colour occurred in UHP-pasteurized minced beef samples than in the radiation-pasteurized ones. Whereas radiation pasteurisation caused minimal changes in appearance, texture and DSC-thermograms of minced beef, UHP-pasteurisation of the raw samples proved to be strongly discolouring by denaturing the muscle pigments and causing extensive denaturation of the myofibrillar proteins. The water holding capacity of irradiated samples decreased, while that of high pressure treated ones increased as compared to the untreated control. Near infrared spectrometry and electronic nose measurements gave promising results to make distinctions non-destructively on changes of various physical-chemical changes and quality parameters as a function of pasteurising treatments and/or storage.

Purpose

Reduced functional mobility is a risk factor for falls. The Timed Up and Go test is a complex measurement tool for functional mobility. Our aims were to assess the functional mobility of: (a) community-living elderly who were participating in an exercise programme (n = 40; mean age = 73.7 years), (b) community-living elderly who were physically inactive (n = 40; mean age = 74.1 years), and (c) institutionalized elderly (n = 40; mean age = 73.5 years) and to compare the results with cut-off values for risk of fall.

Materials and methods

After measuring functional mobility, one-way independent ANOVAs and sample t-tests were used for analysis.

Results

The functional mobility of the active participants was better than that of the inactive (p < .001) and institutionalized participants (p < .001). There was no significant difference between the inactive and institutionalized participants (p = .990). The functional mobility of the active participants was better, whereas the functional mobility of the inactive participants was worse than the cut-off value of 13.5 s for risk of fall for community-living elderly. The functional mobility of the institutionalized participants did not differ from the 15-s reference value for predicting risk of fall.

Conclusion

The results indicate that regular physical activity has a positive effect on maintaining functional mobility among both community-living and institutionalized elderly individuals.
